I thought it would be a nice idea to share some recipes with you, so I'll be sharing a variety of recipes, both savory and sweet (but mostly sweet ;))
1 cup butter (2 sticks)
1 cup packed light brown sugar
2 cups quick cooking oatmeal
2 eggs whites
1. Pre-heat oven to 375 degrees. Lightly grease 2 baking sheets
2. In a large saucepan, melt the butter. Stir in the brown sugar and oatmeal and cook, stirring for 2 minutes. Transfer to a large bowl.
3. In a small bowl, beat the egg whites until stiff, but not dry. Fold the beaten egg whites into the oatmeal mixture.
4. Drop the mixture by tablespoon 2 inches apart onto prepared baking sheets. Flatten the cookies with the back of a spoon dipped in flour.
5. Bake for 7 to 10 minutes or until the edges are light brown (take out before its too late) Transfer to wire racks to cool.
These cookies are so beyond delicous! I hope you enjoy them as much as my family and I do! :)
